Looking for a healthy breakfast treat this Christmas? I’ve got just the thing. I baked up a special twist on Cranberry Bread that’s tasty yet missing all the fat.
Instead of using oil in this recipe, you’re going to replace it with applesauce. I promise you won’t miss it. Plus the applesauce goes perfectly with the Cranberry giving you a sweet, flavorful, bread.
Healthy Cranberry Applesauce Bread
Ingredients you need:
- 2 cups all-purpose flour
- 3/4 cup sugar (brown or white)
- 3/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup chopped cranberries
- 1 egg
- 1 cup applesauce
- pinch of cinnamon (optional)
Directions:
Preheat oven to 350°F. Grease bottom only of a 9×5-inch loaf pan with shortening or cooking spray. In a large bowl, mix butter, granulated sugar, eggs and applesauce with a wire whisk. In a separate bowl, stir flour, baking soda, salt, baking powder, and cinnamon. Slowly stir wet ingredients into dry ingredients. Add in cranberries. Pour into a loaf pan and bake for 50 minutes, until knife comes out clean. Cool for 10 minutes. Serve warm or cool completely for about 2 hours.
